Dulce de Leche Ice Cream Sandwiches

Ingredients:
- 2 cans of sweetened condensed milk (or store bought Dulce de Leche)
- 1 cup of butter
- 1/2 cup of sugar
- pinch of salt
- 2 1/4 cups all-purpose flour
- 1 box of vanilla ice cream
Procedure:
Remove the label from the sweetened condensed milk cans. Place the cans in a pot and cover completely with water. Bring the pot to a boil, lower the heat to a simmer and let simmer for about 2 ½ – 3 hours, making sure to add more water as necessary to keep the cans fully submerged in water. Remove the cans of dulce de leche from water and let cool to room temperature.
Preheat oven to 350° F.
Cream together butter, sugar and salt and add the flour and combine. Roll out the dough to ½ -inch on a lightly floured surface. Using a 2 ½ – inch round cutter, cut out shortbread cookies and place on a baking sheet. Bake for 15-20 minutes until golden brown.
To assemble the ice cream sandwiches, open the cans of dulce de leche. Note: since the ice cream was melting so fast, I decided to do two sandwiches at a time. Lay half of the shortbread cookies on a tray. Spread dulce de leche on one half of the cookies. Grab ice cream and cut off a 1/2 inch slice and lay on cutting board. Grab 2 inch round cutter and cut out ice cream. Place the ice cream on the cookie and top with the other half. Lightly press down and wrap in saran wrap and place in freezer until ready to serve.

Greek Butter Cookies

Ingredients
- 1 cup butter, softened
- 3/4 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/2 cup powdered sugar for rolling
Procedure
1. Preheat the oven to 400 degrees F. Grease cookie sheets, or line with parchment paper.
2. In a medium bowl, cream together the butter, sugar and egg until smooth. Stir in the vanilla and almond extracts. Blend in the flour to form a dough. you may have to knead by hand at the end. Take about a teaspoon of dough at a time and roll into balls, logs, crescent or ‘S’ shapes. Place cookies 1 to 2 inches apart onto the prepared cookie sheets.
3. Bake for 10 minutes in the preheated oven, or until lightly browned and firm. Allow cookies to cool completely before dusting with confectioners’ sugar.
Tips:
*Try dipping some in chocolate and edging them in chopped walnuts.

Mud Hen Bars

Ingredients
- 1/2 c. butter, room temp
- 1 c. granulated sugar
- 3 eggs
- 1-1/2 c. all-purpose flour
- 1 t. baking powder
- 1/4 t. salt
- 1 c. nuts chopped
- 1/2 c. semi-sweet chocolate chips
- 1 c. marshmallows
- 1 c. brown sugar
Procedure
Beat together sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put aside the whites for later). IN a separate bowl, mix together the flour, salt and baking powder. Add to the butter mixture and mix well. Spread into 9x13” pan. Sprinkle with marshmallows, nuts and chocolate chips.
Beat egg whites until stiff peaks form. Fold in the brown sugar. Spread over the mixture in pan. Bake in a preheated 350 degree oven for about 30 minutes or until bars are a deep golden brown and the crust is cooked through. Cool in pan and cut.

Chocolate Oreo Cupcakes with Cookies and Cream Frosting

Ingredients
- 1 package chocolate cake mix
- 1 package instant chocolate pudding mix
- 1 cup sour cream
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 4 eggs
- 1/2 cup warm water
- 2 cups chopped Oreo Cookies (approximately 24 cookies)
Procedure
- Preheat oven to 350 degrees Fahrenheit. Line 24 muffin cups with paper liners.
- In a large bowl, mix together the cake and pudding mix, sour cream, oil, vanilla extract, eggs, and water. Gently stir in the Oreos and divide batter into 24 lined muffin cups.
- Bake for 20 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool completely before frosting.
Cookies and Cream Frosting:- 1 stick unsalted butter, room temperature
- 8 ounces cream cheese, room temperature
- 3 cups powdered sugar
- 12 Oreo cookies, finely chopped
- 1 teaspoon pure vanilla extract
- pinch of salt
Beat butter and cream cheese with until fluffy, 2 to 3 minutes. Slowly add sugar, 1 cup at a time. Add salt and vanilla; mix until smooth. Place Oreo cookies in a fine strainer to remove any small particles. Gently stir Oreos into the frosting, careful to not over stir. Frost cupcakes as desired. Store any remaining frosting in the fridge.Tags

Cookie Brownies

Ingredients
Brownies:
1 box brownie mix and ingredients needed to prepare as directed on box
Cookies:
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 package vanilla instant Jell-O Pudding (not prepared)
- 1 dash of cinnamon
- 1 cup (2 sticks) butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups chocolate chips
Procedure
Heat the oven to 350F. Grease an 8×8-inch square baking pan, line the pan with parchment paper, then grease the paper.
Prepare Brownie mix as directed on package. Set aside.
In a medium bowl combine the flour, baking soda, salt, package of vanilla pudding mix, and dash of cinnamon. In a second larger bowl beat together the butter, sugar, brown sugar and vanilla extract until creamy. Add the eggs one at a time, beating well after each addition. Slowly beat in the flour mixture until smooth. Stir in the chocolate chips
Pour the brownie batter into the prepared pan, spread evenly. Drop teaspoons of cookie dough evenly over the brownie batter. Pushing the dough down so that it is level with the brownie batter. Bake for 25 - 30 minutes until cookies are golden brown and brownies are set. Cool completely before removing from pan.

Banana Bread Cookies

Ingredients
(4 dozen cookies)
- 1 cup sugar
- 1/2 cup (1 stick) butter
- 2 eggs
- 1 cup ripe mashed bananas (about 3)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semisweet chocolate chips
- 1/2 cup chopped walnuts
Procedure
- Preheat oven to 350 degrees F. Coat baking sheets with cooking spray.
- In a large bowl, cream together sugar and butter until light and fluffy. Add eggs and beat thoroughly. Beat in mashed bananas and vanilla until well combined. Gradually blend in flour, baking soda, and salt. Mix until just combined. Fold in chocolate chips and walnuts. Drop mixture by teaspoonfuls onto prepared baking sheets.
- Bake 12 to 15 minutes, or until light golden. Remove to wire racks to cool completely.

All American Cookies

Ingredients
(3 dozen cookies)
- 1 cup sugar, divided
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup (1½ sticks) butter, softened
- 1/3 cup applesauce
- 3/4 cup shredded sharp Cheddar cheese
Procedure
- Preheat oven to 350 degrees F.
- In a small bowl, combine 1/2 cup sugar, cinnamon, and nutmeg; set aside.
- In a large bowl, combine remaining ingredients, except cheese, and mix well. Gradually add cheese and stir until evenly blended.
- Roll batter into balls and place 2 inches apart on ungreased nonstick cookie sheets. Flatten cookies with a fork and sprinkle generously with sugar mixture. Bake 12 to 14 minutes or until golden.
- Remove from cookie sheets while still warm.

Sweet and Salty Cookies

Ingredients
(2 dozen)
- 1 (18-ounce) package refrigerated sugar cookie dough
- 1 cup coarsely crushed pretzels
Procedure
- Preheat oven to 350 degrees F. Shape cookie dough into 1-inch balls.
- Place crushed pretzels in a shallow dish. Roll the dough balls in crushed pretzels, coating completely.
- Place 1 inch apart on ungreased cookie sheets and bake 12 to 14 minutes, or until golden.

Melting Moments Cookies

Ingredients
- 175g unsalted butter, softened at room temperature
- 40g icing sugar
- 1/2 teaspoon pure vanilla extract
- 175g plain flour
- 40g cornflour (cornstarch)
Procedure
- With an electric mixer, cream butter and icing sugar together until pale and fluffy. Add the vanilla extra and beat for a few seconds.
- Sift the flour and cornflour together over the butter mixture and mix until smooth.
- Spoon the mixture into a piping bag fitted with a large star-shaped piping nozzle. Pipe into the required shapes on a baking tray lined with parchment paper. Space the shapes well apart.
- Bake the cookies in preheated oven at 180degC for 12 minutes or until they are a pale golden colour. Leave for a few minutes on the baking tray to firm up slightly before transferring to wire rack to cook.

Melt-in-mouth German Cookies

Ingredients
(makes 60 pieces)
- 125g butter, soften at room temperature
- 40g icing sugar, sifted
- 1 teaspoon vanilla extract (optional)
- 125g potato starch
- 80g cake flour
Procedure
- In a mixing bowl, beat butter and icing sugar till light and fluffy. Add in vanilla extract (if using) and mix well.
- Sift in potato starch and cake flour. With a spatula, mix to form a soft dough. Note: if the mixture appears too soft and wet to shape, leave the dough to chill in the fridge for about 10-15mins .
- Roll dough into small balls (about 2cm in diameter), arrange on lined baking pan and press lightly with a fork (dip the fork in water after each press to prevent cookie dough from sticking to the fork).
- Bake in preheated oven at 170 deg C for 15 mins, upper rack (need not bake till cookies turn brown).
